Zesty Shrimp Cocktail
Ingredients for Shrimp: 6 cups water 2 Tbsp. sea salt 2 Tbsp sugar 1/2 sliced onion 1 Tbsp fresh parsley 2 Medium lemons 2 pounds shrimp (shelled and deveined) Sauce Ingredients: 1/2 cup chili sauce 1/2 cup ketchup 1 tsp freshly grated lemon zest 2 Tbsp. freshly squeezed lemon juice 1 Tbsp horseradish (or to taste) 1 tsp. Worcestershire sauce 2 dashes tabasco (or to taste) Directions: Slice 1 lemon into wedges Place a large pot on the stove and fill it with 6 cups of water, onion, salt, sugar, and a little parsley. Take one lemon, and squeeze the juice into the pot Bring to a boil. Then, remove the pot from the heat source and add the shrimp. Once the shrimp turn pink (This will just take a couple of minutes, so be cautious not to overcook) remove the shrimp and place them on ice. In the meantime, prepare the shrimp cocktail sauce, by thoroughly mixing the ingredients in a medium-sized bowl. Chill the sauce and the shrimp separately in the refrigerator, for about an hour. Serve the shrimp in beautiful stemmed glasses, with a bit of cocktail sauce, Garnish with lemon wedges and parsley. Enjoy!
