A Classic Lobster Salad

There are many different ways to serve lobster meat but you definitely won't be wrong to opt for a refreshing and delicious lobster salad. It tastes great when served on lettuce leaves or as a sandwich filling. And it's a fabulous choice for those warmer summer days. Ingredients:
  • Diced and cooked lobster meat, about a pound (this amount of meat is usually obtained from 3-4 1-pound lobsters)
  • A tablespoon of lemon juice
  • 4-6 tablespoons of mayonnaise
  • Half a cup of sliced celery
  • Lettuce leaves or other mixed salad greens
  • You can (optionally) add sliced cucumbers and tomatoes, avocado, etc.
  • Salt and pepper according to taste
Essentially, all you have to do is mix the lobster meat with celery and lemon juice and then moisten it well with mayo by stirring. Add salt and pepper to taste and serve with lettuce/greens and other veggies. Lobster Newburg with Rice

This satisfying creamy dish dates all the way back to 1876 when it was served as a specialty at Delmonico's Restaurant in New York City. This rich history speaks volumes about the appeal and deliciousness of this particular lobster recipe. Ingredients:
  • A quarter cup of butter
  • 2 tablespoons of flour
  • ¼ teaspoons of salt and nutmeg
  • Half a teaspoon of sweet paprika
  • 1 1/2 cups of half and half
  • 3 slightly beaten egg yolks
  • 2 cups of chopped and boiled lobster
  • 1-2 tablespoons of dry sherry
  • 3 cups of cooked rice
  • Fresh parsley for garnish
Melt the butter in a pan over medium heat and then remove it from the heat to add flour until the mixture is smooth. Only then mix in the salt, nutmeg, and paprika. Add the cream, bring it back to the heat, and stir until it boils. Simmer on a low heat for about 3 minutes. Take half a cup of the cream, mix with the beaten egg yolks, and then pour the egg and cream mixture back to the pan with cream. Now place the cream pan over a pot of hot water, add your lobster meat and cook until the lobster is heated and the sauce is nicely thickened. This usually takes about 10 minutes. Lobster Macaroni and Cheese

One of the rather interesting and increasingly popular lobster recipes pairs the comforting macaroni and cheese with the tender and delicious lobster meat. Of course, fresh lobster is always a preferred choice but if you can't get your hands on it, frozen lobster tails will do just fine in this particular dish. Ingredients:
  • 8 ounces of macaroni
  • 6 tablespoons of butter (separate in half)
  • Half a teaspoon of salt (and a pinch more for pasta water)
  • A tablespoon of chopped fresh parsley
  • 4 thinly sliced scallions
  • 3 tablespoons of flour
  • 2 1/2 cups of milk
  • 1 egg (larger)
  • 1 cup of sharp shredded cheddar cheese
  • 1 cup of mild shredded cheddar cheese
  • 1/4 teaspoon of nutmeg
  • 1/8 teaspoon of black pepper
  • 4 tablespoons of dry sherry
  • 8 ounces of cooked and chopped lobster meat
  • 1 1/2 cups of breadcrumbs
Preheat the oven to 350 F while you cook the macaroni in salted water. Melt 3 tablespoons of butter in a pan and then add parsley and scallions to cook for about a minute more. Then proceed to add flour and stir and cook for an additional 2 minutes. Pour in milk and cook and stir until the sauce thickens. Whisk the egg separately and mix with about 1 cup of the sauce; then pour the sauce and egg mixture back to the pan with the rest of the sauce and mix well. Toss in the sharp cheddar cheese, half a cup of mild cheddar cheese, half a teaspoon of salt, nutmeg, pepper, and sherry, and blend everything nicely. Take another large bowl and mix the sauce, macaroni, and lobster meat. Get a baking dish and grease it with oil and pour the mixture into it. Sprinkle with the remaining mild cheddar cheese. Melt the remaining butter and mix it with breadcrumbs and then pour it all over the layer of mild cheddar for a final touch. Bake the whole thing for about 25 minutes and you're done.  

How to Steam the Lobster Perfectly

The easiest way to go about preparing your lobster meat for some of the previously mentioned recipes is to steam it. Luckily, as long as you have a large pan, you can do this without too much trouble. You can place the lobsters directly into the pot or use steaming racks, whatever you prefer, and find more comfortable. Essentially, you want to fill the pot with water up to two inches on the sides and pour 2 tablespoons of salt for every quart of water. Once the water boils, place your lobsters in one at a time, positioned with a headfirst. Cover the pot and immediately bring back to the heat so that it continues boiling. The first pound of lobster should be steamed for 7 minutes. For every additional pound, you want to boil, add 3 minutes more. Basically, your cooking time chart works a bit like this:

Make sure to remove the lobsters with a tong once they're done to avoid burning yourself. Leave them to cool at room temperature for about 5 minutes before you proceed to crack them and remove the meat from the shell. Keep in mind that the first sign that the lobster is thoroughly cooked is when its shell appears bright red throughout. On the inside, the meat should be creamy white, with no translucent areas whatsoever.
